Mochi (filled)

This is for a simple mochi recipe
Ingredients:

1 cup mochiko (sweet rice flour)
1 cup water
1/4 cup sugar
Potato or corn starch for dusting and working with mochi

Optional ingredients:
Food coloring to make different colored mochi
Vanilla or other extract for flavoring (strawberry goes very well with this recipe)
fillings can vary from red bean paste, chocolate ganache, etc...
coconut flakes make a good coating


Directions:
Using a microwave safe bowl - glass or ceramic, mix the rice flour and sugar.   Add water and mix thoroughly.   Next, place plastic wrap over the top of the bowl and microwave for about 2 mins.  Take off plastic wrap from top, stir a little pushing down sides, re-attach plastic wrap and place back in microwave for another min.  Remove from microwave and set-aside as you prepare your work area.


Technique:
For best results, work and form the mochi soon after making.  To do this, create a work area by using one of the following options or use a counter top.
1) Wrap plastic wrap around a cutting board and then lightly dust with potato or corn starch.
2) Instead of cutting board, use a shallow baking dish as work area and lightly dust with potato or corn starch


Take the sticky mochi out of the bowl and place onto work area.  Dust mochi and your hands with more starch powder.  Working quickly,  mold and divide the mochi dough into half, then fourths, etc... until you have your desired sized pieces.  Generally, this recipe with make about 6-8 sized mochi balls.  


If using filling, place the small ball in the palm of your hand and form a small dip in the center and place filling.  Quickly, wrap filling with dough working so that the filling is pushed in the center and mochi is formed around it in an even manner.  Dust your hands with potato or corn starch to make working with the dough easier as the mochi is very sticky.  


Once formed, you can serve immediately or in a few hours.  Store in a cool place.
