serves 4-6
Ingredients:
1 bag of Ore-Ida Potatoes (check the Freezer section)
1 each of green and red bellpeppers, diced
1/2 onion chopped.
1 can Crescent rolls
1 cup ham, bacon or sausage
6 eggs
sharp cheddar cheese. Enough to cover top of dish.
Place crescent rolls in bottom of dish to make a crust. Spread with your favorite mustard. In a saucepan, brown potatoes, with bellpeppers and onions and set aside.
Add the 1/2 potato mixture on top of quiche dish. Add 1/2 of meat and then add 1/2 potato mixture then add other half of meat. Top with grated cheddar cheese.
Pour egg mixture over everything. If not, add another egg.
Use some seasonings. I like Joe's Stuff seasoning from New Orleans.
Bake at 350 degrees for 35-45 minutes unitl you can stick a knife in it and it comes out clean.
Serve with grapes and blueberry muffins.
